Blue violations relate to the cleanliness and condition of the operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately. Comments are taken from the latest county inspection reports, available at the Thurston County Environmental Health Office. Main cook line refrigerator was at 51 to 53 degrees. Blue – Access doors to walk-in cooler on threshold needs cleaning. Entire cook’s line needs cleaning. Tiles throughout the building are broken or missing. Light shields need to be provided for walk-in cooler and bakery case. Compliance rating: 94 percent.
