Cornbread Dressing for Crockpot

For any southerners relocated to the Pacific Northwest, here is a fabulously simple recipe for cornbread dressing (in lieu of stuffing) that is very moist and won't take up valuable real estate in the oven:

Cornbread Dressing for Crockpot

1 - 8” pan cornbread, cooled and crumbled

8 slices dry white bread, torn into small pieces (maybe 6 for extra moist)

4 eggs, slightly beaten

2 c. chicken broth

2 cans cream of chicken soup

1 t. sage

½ t. pepper

1 c. finely chopped celery

1 medium onion, chopped

2-3 T. butter

Mix all the ingredients together, except the butter. Place in crockpot and dot butter on top. Cook 2 hours on high or 4 hours on low.
