Sweetheart Pudding

This is my great-grandmother's recipe from the Isle of Lewis, Scotland. A family favorite, the ingredients are most likely in your kitchen making it easy to whip up on short notice.

Sweetheart Pudding

Boil together for 4 minutes and pour in 8" baking pan (I use Pyrex):

2 cups water

2 Tbsp. butter

1 cup brown sugar

Cream 1 Tbsp. butter

1/2 cup white sugar

Mix and add:

1 cup flour

2 tsps. baking powder

1 tsp. cinnamon

1/4 tsp. cloves

1/4 tsp. salt

1/2 cup milk with 1 tsp. vanilla

1/2 cup raisins

Drop by spoonfuls into liquid.

Bake 1/2 hour at 350 degrees.

Makes cake topping with thick sauce underneath.

Top with ice cream or whipped cream.

Sweet and delicious!
