Food trucks come to city of Olympia

OK, there have been scattered food trucks around Olympia for a while, but the city was kind of being a pain about them with too many rules and restrictive licensing requirements.

The city finally found a bit of common sense and lightened up. So now there is actually a small food truck court downtown.

I have also seen a few new trucks scattered here and there. Unfortunately, I haven’t been able to dine at one of these new options as of yet. Hopefully that will change very soon.

Food trucks are everywhere these days. In this economy it gives entrepreneurs a way to start a restaurant business with a substantially lower overhead than opening a brick and mortar joint.

Better yet, they are able to travel around the area and share their food with different communities while finding their niche. Many towns and cities have had their lunch scenes transformed by them.

And, I think they are here to stay.

There will always be a place for a real sit-down restaurant, but the food trucks are a great asset to both the owners and the communities they serve.
