Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Oyster House

Sept. 7: Routine check

COMMENTS: Red – Foods in top of rail of refrigerator across from grill was at 45-58 degrees. All cold storage and holding must be 41 degrees or colder. Blue – None noted.

COMMENTS: Red – Cook was not wearing gloves. Full tubs of baked potatoes cooled in refrigerator. Potatoes must be cooled in pans no deeper than 2 inches. Blue – Two-door refrigerator operating above 41 degrees. Evidence of rodent entry.

COMMENTS: Red – Sour cream in top of make case was 47 degrees. Blue – Ice scoop was stored in ice. Hole in tile near dish pit needs to be repaired.

COMMENTS: Red – Prep cooler with meats was at 54-57 degrees. Call cold holding and storage must be 41 degrees or colder. Back handwash sink had no hand soap. Blue – Food probe thermometer could not be found. Underneath equipment, corners and edges need additional cleaning.

COMMENTS: Red – Two instances of bare-hand contact with ready-to-eat foods was noted. Cooked broccoli on line steam table was 81-89 degrees. All hot holding must be 140 degrees or higher. Unpasteurized whole eggs were used in the preparation of crab cakes. Eggs must be pasteurized. Blue – None noted.
