Comments are taken directly from latest county inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer.

Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

COMMENTS: Red – Re-hydrated hash browns in cooler drawer at 85-90 degrees. Ham slices in cooler were 57 degrees. Ham thawing in standing water at 56 degrees. Blue – Walk-in cooler needs additional cleaning, as wells as corners edges, fronts of equipment, general environmental surfaces. Floor drains need additional cleaning. Inside ice machine and lip inside needs additional cleaning. Wall damage and hole in wall under cooler needs repair. Two-compartment sink and other damage needs repair and seals. Dish racks are worn and no longer easily cleanable. Compliance rating: 85 percent.

COMMENTS: Red – None noted. Blue – Various areas in kitchen have some floor damage beginning. Compliance rating: 99 percent.

COMMENTS: Red – Whole raw eggs in pan of ice, but only about one-inch is covered. Eggs were 80 degrees. Blue – Additional cleaning needed under equipment, corners, and edges. Restrooms need additional cleaning. Re-caulking needed in dish area, and hand sink area. Ice machine needs additional cleaning inside. Compliance rating: 94 percent.
