Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red – Eggs were sitting out on top shelf of work table at 73 degrees. Crab salad on buffet table was 45 degrees. Blue – none noted.

Comments: Red – Several employees had missing or expired food handler cards. Employee handling raw meat failed to wash hands between glove change. Employee refilling salad bar containers failed to wash cherry tomatoes. Several refrigerators not operating to required temperature. Employee at short-order cook line was using the incorrect type of thermometer to gauge hamburgers. Blue – Raw eggs on carton stored directly above other food items. Dishwasher final rinse temperature was not reaching 180 degrees.

Compliance rating: 86 percent.

BLACK BEAR

Comments: Red – Several employees had missing or expired food handler cards. Several refrigerator drawers below the grill had temperatures above 41 degrees. Blue – Sanitizer buckets had no residual sanitizer detected. Any equipment, utensil, dishware, or containers in disrepair need to be replaced. Missing or broken floor tiles and grout is low in area near dishwasher and needs repair. Missing light shields in walk-in need to be replaced.

Compliance rating: 93 percent.
