Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red – Hand sink in back is completely blocked from use. Two employees have no food handler cards. Sandwich prep table does not have consistent temperatures. Blue – Bags of deli teriyaki chicken were sealed in their bags but thawing in back on counter, when they should be thawing under running cold water, or in the refrigerator. Inside microwave was filthy. Back room floor is showing signs of dirt accumulation with build-up where there is no foot traffic.

Comments: Red – Employee was observed handling raw chicken with a glove on, washes his gloved hand with no soap and then proceeds to handle ready-to-eat food. Produce in top of food prep refrigerator was expired and beginning to decompose. Blue – No dates on food items removed from original packaging. Food was uncovered in refrigerator and walk-in. Lids to rolling containers in back preparation area are in disrepair. Door seals to refrigerators along cook’s line are torn, missing or very filthy. Inside of refrigerators are dirty. Exterior of most equipment in the front and back have a film of grease, oil, and dried food residual on them. Entire cook’s line is under distress. The conditions are unhealthy and unsafe.
