Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Villa Pizza

June 18: Routine check

Westfield Capital Mall, Olympia

Comments: Red — All employers and employee food handler cards were missing. Hot holding food items were below 140 degrees without an accurate time and temperature control plan. Pieces of chicken inside of a metal insert pan has a temperature of 61 degrees because it was kept on top of other insert pans. Employee washed pans and bowls, then immediately goes to prepare pizza with bare hands and without washing hands. Pot used to heat sauce has obviously been used for cooling and reheating several times based on the amount of hardened sauce around the inside of the pot. Blue — Some food surfaces were not cleanable, sanitized or maintained.

Comments: Red — Top of make-case for tofu was at 54-55 degrees. All cold holding and storage must be 41 degrees or below. Blue — No sanitizer detected in final rinse of dishwasher.
