Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red — Several employees were missing food handler cards. Handsink at cook’s line near counter is without hot water. Discolored hamburgers due to improper refrigeration still in drawer and available for cooking. Refrigeration beneath grill on right side not operating. Food temperatures varying between 53-64 degrees. Blue — Walk-in cooler ceiling panels are collecting condensation and continues to drip directly over food below. Several sanitizer buckets without any sanitizer. Ice scoop handle buried in the ice for the ice machine. Door seals to refrigerator prep cooler table in front are partly missing or torn. Meat slicer extremely filthy beneath cover. Floor beneath entire cook’s line extremely filthy with accumulation of trash, grease, grime, food debris. This has been a serious problem in the past and needs immediate attention.
