Comments are taken directly from latest county inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately. Pellegrino’s Aug. 30: Routine check 15 red 7 blue 205 Cleveland Ave., Tumwater Comments: Red — No soap at handsink in back food prep area. Right side of salad prep table was at 45 degrees. Cold storage/holding must be 41 degrees or below. Blue — Employee drink was on cookline where food is exposed and prepared. Clean wall in back of dishwashing area. Compliance rating: 94 percent. Bonsai Teriyaki Aug. 31: Routine check 35 red 5 blue 408 Cleveland Ave. SE., Tumwater Comments: Red — Large tub of par-cooked chicken was found cooling at room temperature. Chicken was 86-100 degrees, with a depth of more than three inches. There were employees with expired food handler cards. Blue — Pitcher used to scramble eggs must be replaced every four hours when kept in refrigerator. Compliance rating: 91 percent. KFC Aug. 30: Routine check 0 red 0 blue 5110 Capitol Blvd., Tumwater Comments: Red — None noted. Blue — None noted. Compliance rating: 100 percent. Casa Mia Aug. 29: Routine check 0 red 0 blue 716 Plum St., Olympia Comments: Red — None noted. Blue — None noted. Compliance rating: 100 percent. Subway Aug. 30: Routine check 5 red 5 blue 408 Cleveland Ave. SE, Olympia Comments: Red — Some employees did not have food handler cards. Blue — The disposable polyester towels used for contact sanitizing are dirty and worn out. New towels are not accessible to employees, and these towels should not be laundered and re-used after one day. Compliance rating: 97 percent.
