Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red — Cooked chicken and par-cooked chicken cooling in two-door reach-in not in a single layer arrangement, but heaped in the pan. Cooked chicken from earlier in the day stored for preparation at 78-86 degrees. Blue — Raw meats immersed in water wihtin food sink. Open wall at servers prep counter must be painted.

Comments: Red — Paper towel dispenser by drive-thru window missing paper towels. No water at handwashi sink. Cole slaw in vegetable walk-in was 48 degrees. Cold storage/holding must be 41 degrees or below. Blue — Thermometer missing from undercounter reach-in refrigerator.

Comments: Red — Main prep cooler on cook’s line was 46 degrees with condenser lines frozen over with ice. Several thermometers missing inside several refrigerators. Missing sneeze guard to buffet line. Missing, torn, and worn down door seals to prep cooler doors. Blue — Meat slicer dirty. Inside food prep cooler was dirty. Light shield cracked with missing end caps inside dry storage.

Comments: Red — Several employees and owner are without current food handler cards. Two trays of cooked eggs left out on cart and covered. Temperature of eggs was 74 degrees. Several burritos on counter wrapped, at 49-63 degrees. Blue — Back screen door not sealed at bottom. Wiping cloth and bucket without sanitizer residual. Both bakers with hanging beards need to be provided with beard nets or remove beard. Prep cooler doors have torn or partially missing door seals. Floor very dirty beneath the mat behind counter.
