Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately. Red Lion Oct. 8: Routine check 15 red 20 blue 2300 Evergreen Parkway SW, Olympia Comments: Red — Main prep cooler on cook’s line was 46 degrees with condenser lines frozen over with ice. Several thermometers missing inside several refrigerators. Missing sneeze guard to buffet line. Missing, torn, and worn down door seals to prep cooler doors. Blue — Meat slicer dirty. Inside food prep cooler was dirty. Light shield cracked with missing end caps inside dry storage. Compliance rating: 91 percent. Wiping cloth and bucket without sanitizer residual. Both bakers with hanging beards need to be provided with beard nets or remove beard. Prep cooler doors have torn or partially missing door seals.
