Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, its permit will be suspended immediately.

Comments: Red — Missing food probe thermometer. Blue — None noted.

El Sarape

Nov. 26: Routine check (15 red; 13 blue)

Comments: Red — Food handler cards were locked in office and unavailable for inspection. Windex stored next to take-out containers. Blue — Ice scoop stored in ice machine. Dishwasher final rinse not hot enough. Inside lip of ice machine needs cleaning.

Compliance rating: 93 percent.

New Teriyaki & Sushi

Comments: Red — None noted. Blue — Knife stored between countertop and wall. Additional cleaning needed to floor, walls, and under equipment. Chlorine used up in sanitizing solution.

Nov. 28: Routine check (10 red; 10 blue)

Comments: Red — No hand soap at handwash sink opposite grill. Blue — No thermometer found in sushi display case. Rice scoops stored in 56 degree water. Walls and ceiling in prep area need cleaning.

Compliance rating: 95 percent.

Comments: Red — None noted. Blue — Various food items in open and unsealable containers.
