Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red – Some employees, including manager/owner did not have food handler cards. Employee was observed mopping floor due to spilled liquid, possibly blood, and then going directly to putting on gloves to finish cutting vegetables, without washing hands. Vegetables not washed prior to cooking. Blue – No handles to scoops used for rice containers. Wooden rolling carts with carpet used to store food on in walk-in. Small wood pallet beneath boxes of vegetables inside walk-in. No wood should be in the kitchen. Meat slicer unclean from last use. Outside and inside door threshold very dirty. Back and front kitchen floor has several spills and food residual building up.

Comments: Red – One reach-in cooler was 45 degrees. Cold storage must be 41 degrees or colder. Blue – Several containers of food on the cook’s line were left uncovered. Duct tape used to maintain the meat slicer. Duct tape is not cleanable. Meat slicer and can opener were dirty with dried on food residual. Inside bottom shelves of all reach-in coolers were very dirty. Many fixtures are missing lights or light covers. Cleanliness to less obvious areas is poor.

Comments: Red – Several employees lack food handler cards. Blue – Walk-in door fails to shut. Maintenance continues to be a problem with the facility. Missing light shield to fixture inside non-working walk-in.
