Comments are taken directly from latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Pad Thai

315 Cooper Point Road SW, Olympia

Jan. 23: Routine check (10 red; 31 blue)

Comments: Red — Missing towels for hand sink in kitchen. Blue — Food uncovered, including food inside walk-in. Knives stored dirty between equipment. Bowls used as scoops for ingredients. Large wooden rack used to store individual containers of tea flavors. No exposed wood is allowed in kitchen area. Dishwasher sanitizer residual is weak and water is leaking from beneath the machine. Soda nozzles covered in mold and slime for each flavor to the soda dispenser. Outside surfaces of all stainless steeel coolers are dirty with dried-on food. Floor beneath cook’s line is filthy.

2-Mile House

Jan. 24: Routine check (5 red; 17 blue)

Comments: Red — Missing digital thermometer. Blue — Wiping cloth sanitizer bucket not available. Potato slicer with dried-on food resdue. Left side of grill extremely filthy. Floor under cook’s line has serious grease accumulation. Several lights out in kitchen.

Compliance rating: 94 percent.

Comments: Red — None noted. Blue — Lamps in walk-in cooler, above food sinks, and within exhaust hood must be shielded.

Jan. 29: Routine check (10 red; 18 blue)

Comments: Red — Raw meats stored on same shelf as produce. Digital thermometer not available for checking thin meat. Blue — Utensils in use coated with older food residual. Food contact surfaces are unclean with dried-on food residual. Non-food contact surfaces all need cleaning, degreasing, and sanitizing. Walls, floor, and ceiling have significant amount of grime, soot, dust, food spillage, and grease. Poor lighting in kitchen.

Ranch House

10841 Kennedy Creek, Olympia

Jan. 29: Routine check (30 red; 10 blue)

Comments: Red — Total 10 briskets wrapped in plastic in early morning after being cooked overnight and stored in walk-in at 2:30 p.m. No documentation showing time and temperature control. Blue — Multiple wiping cloths on cook’s line, and most of them were dry. Wiping cloths must be stored in sanitizing solution, and the number of cloths must be limited. Food stored uncovered in walk-in cooler.

Compliance rating: 90 percent.

River’s Edge

4611 Valley Drive, Tumwater

Feb. 1: Routine check (25 red; 13 blue)

Comments: Red — No hand towels in dispenser for handwash sink at cook’s line. Food prep table was at 46-49 degrees. Cold holding must maintain 41 degrees or below. Waffle maker unclean with dried batter. Blue — Staple bins unclean with loose food debris.

Compliance rating: 91 percent.
