RESTAURANT INSPECTIONS

Comments are taken directly from latest county inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

Comments: Red – Owner did not demonstrate knowledge of the food code, such as sanitizing, food temperature requirements, etc. Hand sink not accessible – it was being used as storage. Blue – Storage of raw meat needs to be on the lowest shelf of refrigerator. Cloth towel stored inside sushi rice area. Five or six wiping cloths spread throughout the kitchen on top of cutting boards, counters, etc., and not in sanitizer. Knives stored in crevices of equipment where it is unclean. Door seals to reach-in coolers torn. Microwave on cook’s line interior is dirty. Cook’s line equipment is all dirty with food grime.
