RESTAURANT INSPECTIONS

Comments are taken directly from latest county inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading Inspection Scores:

 • As of May 2013 Compliance Ratings (percentage scores) will no longer be given due to changes in the state food code.

 • Attention should be given to the type of violation (red vs. blue) and whether the restaurant has a history of red violations or repeat violations.

 • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

 • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: floor is worn and needs replacing.

Character’s Corner

June 5: Routine check (70 red, 0 blue)

Comments: Red — All but one employee has no valid food handler card. Employee was using bare hands to slice ready-to-eat foods. Meatloaf cooked yesterday found in walk-in cooler at 44 degrees with aluminum cover. Improper cooling methods used, a repeat violation. Missing a digital thermometer used to probe thin foods. Sandwich prep table was at 44 degrees. Blue — None noted.

June 5: Routine check (25 red, 0 blue)

Comments: Red — Employee failed to wash hands after mopping. Blue — None noted.

Falls Terrace

106 Deschutes Way, Tumwater

June 6: Routine check (5 red, 0 blue)

Comments: Red — Cold holding beneath the grill was at 43-45 degrees. Cold holding/storage must be 41 degrees or colder. Blue — None noted.

Jack in the Box

110 Trosper Road SW, Tumwater

June 6: Routine check (0 red, 2 blue)

Comments: Red — None noted. Blue — Hold employees and managers accountable when assigned specific cleaning duties to keep up with maintenance.
