Reading inspection scores:

As of May , compliance ratings (percentage scores) no longer will be given because of changes in the state food code. › Attention should be given to the type of violation (red vs. blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Blue violations relate to cleanliness and condition of operation .

Comments: Red — Missing thermometer inside food prep table. Blue — Many products without dates to know when they expire. No sanitizer bucket available to store wiping cloths. Floor beneath most equipment throughout the kitchen, storage, etc., are unkept and need cleaning. Inside microwave very dirty from previous days. Tray used to store ice scoop is dirty.

Comments: Red — One sink needs to be kept empty and accessible for handwashing. Blue — Ice machine needs cleaning.

Comments: Red — Chicken breasts on steam table were 128 degrees. Hot holding needs to be 165 degrees or above. Handwashing sink not operational. Blue — None noted.
