Restaurant Inspections for Sept. 25

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading Inspection Scores:

 • As of May 2013, Compliance Ratings (percentage scores) will no longer be given due to changes in the state food code.

 • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

 • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

 • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: floor is worn and needs replacing.

Comments: Red — None noted. Blue — Wooden surfaces such as storage, shelving, and framing must be sealed or painted.

Sushi Kyo

Aug. 20: Routine check (10 red; 0 blue)

Comments: Red — Soap dispenser has become detached from the wall at hand sink. Sink is blocked from use. Blue — None noted.

Fuji Japanese Steak House

7914 Martin Way E., Olympia

Aug. 23: Routine check (10 red; 0 blue)

Comments: Red — Soap missing from handwash sink in dishwash area. Paper towels missing from handwash sink in bar area. Blue — None noted.

Osaka Japanese Restaurant

7265 Martin Way E., Olympia

Aug. 26: Routine check (10 red; 5 blue)

Comments: Red — Tuna, fish, eggs, etc. for sushi were 46 to 48 degrees. Cold holding/storage must be 41 degrees or below. Blue — Scoops, etc. in water at 79 degrees. Water needs to be 41 degrees or below or above 135 degrees. Floor is damaged around grease trap and in front of three-compartment sink.

Aug. 23: Routine check (5 red; 5 blue)

Comments: Red — Top one inch of sliced meats were at 44 degrees. Cold holding should be 41 degrees or below. Blue — Faucet for three-compartment sink is leaking.

4611 Tumwater Valley Drive, Tumwater

Aug. 21: Routine check (15 red; 0 blue)

Comments: Red — Small prep cooler’s front two rows of pan inserts were 45-46 degrees. Coolers must maintain temperature of 41 degrees or below. Sanitizer bottle on top of dishwasher without label. Employees on the line were observed on several occasions wiping knives with sanitizer cloth immediately before slicing sandwiches or between customer’s orders. Blue — None noted.

Comments: Red — No water at sinks for handwashing or sanitizing. Tank empty for fresh water. Blue — No thermometer could be located.

Comments: Red — None noted. Blue — Water supply lines need to be reinstalled to hand sink in back. They were done incorrectly.

Red Robin

1600 Cooper Point Road SW, Olympia

Sept. 10: Routine check (0 red; 10 blue)

Comments: Red — None noted. Blue — Several flies were present in the back kitchen and observed no attempts to control. Walk-in floor shelving casters and walls are unclean. Floors in dry storage and bread storage room need daily sweeping and mopping.
