Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading Inspection Scores:

As of May 2013, Compliance Ratings (percentage scores) will no longer be given due to changes in the state food code.

Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Example: not keeping food at the right temperature.

 Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer.

Example: Floor is worn and needs replacing.

Comments: Red — Refrigerator in back of van was at 50 degrees. Cold storage must be 41 degrees or colder. Missing thermometer for refrigerator in back of van. Separate refrigerator in dog grooming business requires a commissary agreement. Also, restroom agreement indicates no customer use. If incorrect, then update and provide a path to business.

Comments: Red — Employee using bare hands to roll up spring rolls. Bowl of chicken pieces and juices stored directly on top of raw meat prep inserts and were at 54 degrees. Blue — Dry food containers without lids or covers to protect. Employee drinks on food prep table. Food contact surfaces of equipment on cook’s line very filthy, especially inside the empty basins, top of veggie food prep table, microwave, soda nozzles and inside reach-in freezer. All nonfood contact surfaces need cleaning. Entire floor needs cleaning.

Comments: Blue — Additional cleaning needed under equipment, on shelving and in walk-in refrigerators. Hose needs replacement at three-compartment sink. One wall needs additional cleaning.

Comments: Blue — Several cooler thermometers are damaged and need replacement. Cutting boards on cook’s line are damaged and need replacements. Additional cleaning needed under equipment, corners, edges, carts, handles, walls and general surfaces. Floor needs recaulking.

Comments: Red — Diced meat 6 inches deep in stainless pan at 78 degrees. Three-door cooler food items were 44-45 degrees. All cold holding/storage must be 41 degrees or colder. One employee had no food handler card. No cook’s thermometer. Blue — Box of lemons was stored directly on the floor.

Comments: Red — Seven employees were without food handler cards. On several occasions, employees were observed failing to wash hands when required to do so. Missing thermometer to reach-in refrigerator. Blue — There is a serious ongoing issue with flies present. Inside microwave oven was dirty. Dirty trays used to grill chicken were left on back table. Most of the cook line, specifically the frying equipment, continues to be a cleaning issue. Dining area dirty. Not swept or mopped at close of business. Floor needs serious maintenance. Missing light cover in storage room and one light is missing entirely.
