RESTAURANT INSPECTIONS

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

› As of May 2013, compliance ratings (percentage scores) will no longer be given due to changes in the state food code.

› Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

› Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: Food is not kept at the right temperature.

› Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: Floor is worn and needs replacing.

CAPITAL MARKET DELI

2419 Harrison Ave., Olympia

Sept. 13: Routine check (15 red; 20 blue)

Comments: Red — Employee had expired food handler card. Display refrigerator was at 43-44 degrees. Cold storage must be 41 degrees or colder. No thermometer found to monitor temperatures. Blue — Dishwasher has no sanitizer in rinse. This is a repeat violation. Interior of ice machine with mildew growth inside. Inside reach-in freezer and bottom to both freezers dirty with food residual. Outside perimeter, especially behind the building is a mess with scattered cardboard boxes and piles of boxes. Also, several pieces of wood pallets, large barrels of stagnant water with insects harboring inside the water. Floors need further attention to cleaning beneath equipment. Newly replaced lights in kitchen are missing shields.

Sept. 13: Routine check (25 red; 7 blue)

Comments: Red — Bare hand contact with ready-to-eat foods. Blue — Additional cleaning needed, especially along edges and under equipment. No sanitizing solution detected in wiping cloths. Eggs in cooler at 56 degrees. Cold storage must be 41 degrees or colder.

Sept. 13: Routine check (10 red; 5 blue)

Comments: Red — Handwash sink was not accessible. Blue — Several in-use wiping cloths not soaking in sanitizing solution.

Comments: Blue — Shrimp thawing at room temperature. It must be thawed in refrigerator or under cold running water. Knives stored between counter tops while in use. Open bags of food product must be kept sealed in storage closet. DADDY O’S 4663 Whitman Lane SE, Lacey Sept. 12: Routine check (10 red; 0 blue) Comments: Red — Both coolers are above 41 degrees.

Comments: Blue — Resurfacing is needed around dish washing sink to provide a smooth cleanable surface.

Sept. 12: Routine check (0 red; 5 blue)

Comments: Blue — Mop water being dumped on ground in back of building. Even though the use of “green” cleaners is practiced, mop water should be disposed of down utility sink.

Sept. 13: Routine check (15 red; 7 blue)

Comments: Red — Food handler cards are not present. Back hand washing sink was not accessible. Blue — Sanitizing solution must be present for all in-use wiping cloths. Additional cleaning needed on floors, tables, table legs, corners and under equipment.

Comments: Blue — Ice scoop stored inside ice machine.

SHANGHAI RESTAURANT

4418 Sixth Ave. SE, Lacey

Sept. 16: Routine check (25 red; 12 blue)

Comments: Red — Cooked shrimp was 70 degrees on counter. Cooked items must be held at 135 or above or below 41 degrees. Blue — Cabbage and carrots on floor in walk-in cooler. Sinks need additional cleaning. Dish area walls and under dishwasher need cleaning. Inside lip of ice machine needs cleaning.

Sept. 13: Routine check (25 red; 0 blue)

Comments: Red — Small pieces of cooked chicken in covered containers in kitchen were 79 to 116 degrees. Foods must be cooled in proper manner.
