Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading Inspection Scores:

› As of May 2013, Compliance Ratings (percentage scores) will no longer be given due to changes in the state food code.

› Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

› Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Example: not keeping food at the right temperature.

› Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: floor is worn and needs replacing.

Comments: Red — Chowder in hot holding cabinet not at minimum hot hold temperature. Main food prep table inside at 44 degrees, with the top being 45 degrees. This is cold holding/storage and must maintain a temperature of 41 degrees or below. Blue — Two-door beverage was at 43 degrees. Missing splash shield to handsink on the cook’s line. Single-service boxes on floor in dry storage area. Nothing is allowed directly on floor. Food prep table needs servicing and maintenance due to torn door seals and broken hinge on far right door. Meat slicer left unclean and with dried food residual around the blade. Inside food prep table very unclean with spilled and dried food residual on the inside. Floor beneath equipment very unclean.

EMPEROR’S PALACE

Comments: Red — Breaded chicken partially cooked and stored on top of non working top of large refrigeration prep table at 99-109 degrees. Cooked egg rolls at 59 degrees and stored on top of large prep table. Blue — Inadequate refrigeration for cold holding ingredients, specifically the produce bins. Glazed walnuts on sheet allowed to cool inside dry storage open or exposed.

SOUTH BAY DELI

3425 Shincke Road NE, Olympia

Sept. 23: Routine check

0 red; 10 blue

Comments: Blue — Wiping towels had no sanitizer residual on them. Flies present in kitchen.

NAMMY’S DELI SANDWICH

513 Capitol Way S., Olympia

Sept. 23: Routine check

0 red; 13 blue

Comments: Blue — Sanitizing wiping cloths not available. Cutting boards and other work surfaces have food debris and are not being cleaned and sanitized regularly. Refrigerator doors and handles and other nonfood contact surfaces have food debris and grime accumulation.

CASCADIA GRILL

200 Fourth Ave. W., Olympia

Sept. 24: Routine check

5 red; 8 blue

Comments: Red — Some employees were without food handler cards or had expired cards. Blue — Wall behind prep table has food debris accumulation. Refrigerator doors and handles have grime build-up. Hands and gloves contact these surfaces.

EL SARAPE

1200 Cooper Point Road SW, Olympia

Sept. 25: Routine check

5 red; 17 blue

Comments: Red — Missing and expired food handler cards. Blue — Food not covered after allowing to cool in walk-in. Open food allowed to cool down with ice around it in the dry storage area. Some containers are damaged with pieces of plastic breaking off. Several door seals to reach-ins are dirty. Several lights in back food prep area need shields. Floor beneath equipment needs additional attention to cleanliness.
