Restaurant Inspections for Nov. 13

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading Inspection Scores:

As of May 2013, compliance ratings (percentage scores) will no longer be given because of changes in the state food code. Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer.

Example: floor is worn and needs replacing.

Oct. 1: Routine check (10 red; 15 blue)

Comments: Red — Several employees are missing food handler cards. Several thermometers are missing from kitchen. Blue — Food must be covered in food prep refrigerator overnight. Slicer was not cleaned from previous uses. All three food prep tables were filthy on the bottom and several shelves had food dripping or hanging from it. Floors are filthy beneath equipment and on the cook’s line.

Comments: Red — One employee had expired food handler card. Blue — Sanitizer for dishwasher was not reaching rinse cycle.

Sept. 26: Routine check (25 red; 10 blue)

Comments: Red — Ham on line was 124 degrees. Minimum temperature is 135 degrees. Blue — Cleaning is needed in dry storage area, sides of racks, sliding door refrigerator and shelves. Cutting boards have holes in them and must be replaced. Replace three-door beverage cooler.

Sept. 27: Routine check (25 red; 10 blue)

Comments: Red — Several food items near work area are 66 degrees and left out without refrigeration. Blue — No bleach in dishwasher rinse cycle. No bleach detected in wiping cloth bucket.
