Reading inspection scores:

› Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

› Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Example: not keeping food at the right temperature.

› Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer.

Example: floor is worn and needs replacing.

Comments: Blue — Twice during the inspection, a rack of bread was observed on top of the cart directly next to hand sink. A splash shield is needed.

Comments: Red — The sink near grill must be restored with hot and cold running water. Two-compartment sink needs to be stocked with soap and paper towels at all times. Bacon and hash browns under grill were 52 degrees.

Nov. 21: Routine check (15 red; 0 blue)

Comments: Red — The three-door undercounter cooler is 44 degrees on top. Minimum cold storage temperature is 41 degrees. Dishwashing room hand sink not working. These are repeat violations.
