Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

As of May 2013, compliance ratings (percentage scores) will no longer be given due to changes in the state food code.

Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Dec. 10: Routine check (35 red; 16 blue)

Comments: Red — Partially cooked chicken was stored in a hot hold unit not turned on and at 84-114 degrees. Crab meat at sushi station sitting on packs of ice at 45 degrees. Sushi refrigerator was at 45 degrees. Cold storage and holding must be 41 degrees or colder. Missing thermometer to black refrigerator. Blue — Container of raw chicken on floor in front of grill and pot of cooked mushrooms on floor in back. Food must be kept off the ground. Utensils in use for scooping ice was at 54 degrees. Ice needs to be added to container to maintain at 41 degrees or colder. Outside cabinets and equipment on cook’s line were dirty with grease accumulation. Restroom doors, and doors in dining area need to be self-closing. Overall facility is cluttered and dirty on floor and walls.

Comments: Red — Employee was observed mopping floor, then switched gloves without first washing hands. Large container of bean sprouts next to food prep sink was at 61 degrees. Food must be returned to refrigerator after washing. Blue — Raw meat in food preparation sink with no running water. Wiping cloth bucket with sanitizer was too strong. Vent inside walk-in refrigerator was dirty.

Dec. 16: Routine check (0 red; 5 blue) Comments: Blue — In-use utensils need to be stored in ice below 41 degrees or in hot water above 140 degrees. Wall under and behind dishwasher needs additional cleaning.

Comments: Red — Tomatoes and cheese in rail of single-door prep refrigerator was at 45 degrees. Cold storage must be 41 degrees or colder.

Dec. 17: Routine check (5 red; 5 blue)

Comments: Red — Only one current food handler card was available for review. Blue — No thermometers were found in sushi make case.

Comments: Red — Hand soap dispenser was empty at hand wash sink on cook’s line.
