Reading inspection scores:

Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — No food handler cards were available during inspection. No food should be stored on the floor. Blue — Frozen food sitting in food prep sink without running water. Box of sweet potatoes, bag of sugar and bag of flour were all sitting on the floor.

Comments: Red — Hot water was off at the handwashing sink. Bartender used bare hands to put lemon wedge in drink. Blue — Both the restaurant and lounge sanitizer buckets were prepared with no sanitzer. No bleach was detected in final rinse water of large dishwasher.
