Comments are taken directly from the latest Thurston County inspection reports, which are available at each restaurant and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Improper cooling procedures were being used for 4-6 insert pans of beans inside walkin with fat layer on top. Missing thermometer for overnight cooking/ smoking. Blue — Garbage enclosures are filthy with dried and spilled sauces.

BURGER KING

Comments: Red — Some food handler cards were missing. Blue — Maintenance to tiles is needed. Screws loose to hood above grill and food debris on ceiling above production line.

Comments: Red — Chowder and chicken noodle soup in pan at 120 and 110 degrees respectively. Hot holding unit was not turned on. Blue — Sanitizer is not dispensed at proper strength. Sanitizer needs to be manually prepared until dispenser is repaired.

Comments: Red — On steam table, mashed potatoes were at 132 degrees. Minimum temperature is 135 degrees.

Comments: Red — Provide working thermometer in two-drawer stand refrigerator. Blue — Sanitizer in buckets was not at proper strength.
