Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

• Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

• Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer.

Example: not keeping food at the right temperature.

• Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Blue — Dishwashing machine is not providing any chlorine sanitizer for rinse cycle. Utensils, dishes and other equipment were not being properly sanitized. Must verify that drain line of ice machine bin terminates to an indirect drain. Far right door of prep refrigerator falls off when opened.

Comments: Red — Two tubs of raw chicken stored on open shelving at 55-60 degrees. Other foods in two-door reach-in and three-door prep refrigerator was at 47-50 degrees. Walk-in cooler is in the process of being repaired and replaced. All other coolers are at capacity for foods being displaced. Food needs to be distributed to ice baths until walk-in repairs are completed.

Comments: Red — Provide thermometer to two-door prep refrigerator. Blue — Presence of vecter entry. Clean and maintain surfaces such as refrigerator doors and handles. Accumulation of food debris under refrigerators and work counters. Food and debris accumulation on floor in kitchen and back storage areas.
