Reading inspection scores:

 • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

 • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

 • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — On cook’s line, countertop sliced tomatoes and sour cream were between 53-55 degrees. Cold holding must be 41 degrees or below.

Comments: Red — Some missing and expired food handler cards. Chili and nacho cheese not reheated correctly after transferring from walk-in cooler after cooling overnight. Sandwich make table on left side was 44-45 degrees. Must be adjusted to maintain 41 degrees or colder. Blue — Ice scoop to ice machine stored on top of ice machine.

Comments: Red — Employee failed to wash hands after cleaning and handling the register before preparing to make a sandwich. Entire inside and top of sandwich food preparation table was at 52-55 degrees. It must maintain temperature of 41 degrees or colder. Blue — Employee with long hair below shoulder must restrain hair above the shoulder or cover. Cabinet behind counter in poor condition.
