Reading inspection scores:
• Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
• Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
• Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

That sink is to be used only for food prep. Handsink at waitress station is still loose since last routine check.

Comments: Red — Manager had expired food handler card. Cabbage in containers was 51 degrees. Blue — Five-gallon buckets of raw chicken in back two-door reach-in cooler were at 51 degrees. All cold storage/holding must be 41 degrees or colder. Several containers of food in walk-in not covered after cooled. Floor in kitchen is in poor condition in some areas and showing signs of distress.
