COMMENTS: Red - Container of pooled eggs in make case from the night before. You cannot pool more than four eggs at a time for immediate service. Rice was left in cooler overnight. The cooker does not have a monitor and therefore you do not know that the food stayed above 140°F. A safer method would be to cool in properly and then re-heat it as it is ordered. Blue - Empty raw chicken boxes used to cool deep fried food. Must use nonabsorbent, easy-to-clean, shallow pans for cooling. Continue cleaning/painting. COMMENTS: Red - Food worker contaminated gloves by touching open bags of raw meat and failed to remove gloves and wash hands before preparing a sandwich. Open bag of raw meat was kept on a cutting board. Cook used same contaminated surface to prepare sandwiches. There was no cleaning and sanitizing of cutting board before re-use. Three out of four handwashing sinks in food-preparation areas were not adequate for use. One sink at cook line was blocked by large trash can, one sink at cook line did not have soap, one sink at dishwashing area and prep area was not provided with cold water (hot water was scalding at 140°F). All handwashing sinks must be provided with hot and cold running water, liquid soap and paper towels in dispensers. Access to sink must be free at all times. Baked beans with meats, country gravy, beef gravy were re-heated in alto-sham. Re-heating started before 9 a.m. At 12 p.m., foods were measured between 89-128°F. Re-heating of foods must be done rapidly from 41°F to 165°F minimum within two hours. All foods kept in refrigerated units of make tables at cook line were found at 50-52°F. Units did not appear to work properly. Cold holding must be at 41°F or below at all times. Thermometers were not used to check food temperatures. Several food-handler's cards were missing. All food workers must obtain a current food-handler's card and have it available for inspection. Several bagged meats in walk-in cooler were found between 49-53°F. Foods must be allowed to cool down to 41°F or below after being prepped at room temperature. Close bags only when foods are 41°F or below. Blue - Bags of foods were immersed in water dripping from condensation system of walk-in cooler. Condensate water was leaking inside refrigerated units of cook line. Standing water was present inside unit. Food debris were decomposing at cook line, wait station and dishwashing area. Trash must be removed daily. Floors at cook line, wait station, dishwashing area, in walk-in cooler needed serious cleaning. Light bulbs in walk-in cooler must be shielded properly. General - Manager on duty voluntarily closed business in order to bring corrections to all noted violations. Follow-up needed. Compliance rating: 79 percent
