Restaurant Inspections for May 25

Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Any establishment receiving more than 45 red demerit points or more than 65 total demerit points will be automatically reinspected in 10 days. If an establishment exceeds those limits twice in a calendar year, the permit will be suspended immediately.

COMMENTS: Red — Cooked chicken cooling in walk-in cooler in four-five-inch food depths. Chicken was 101 degrees in center of pan. Food should be cooled in depths not to exceed two inches and should remain uncovered until they reach temperature of 41 degrees or below. Beans in a large pot on back burner of stove were being stored at room temperature. Blue — Inside ice machine needs cleaning. In-use wiping cloths not soaking in a sanitizing solution between uses. In-use knives stored in knife rack. Sanitizing solution present with wiping cloths but hadn’t been used.

Missing hose bib vacume breaker to faucet next to dishwasher. Missing light shields and endcaps to both fixtures in back. Floor below deep fryer and area around garbage can was dirty.
