Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment and at the Thurston County Environmental Health Office. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

 • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.

 • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.

 • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.

Comments: Red — Cut fruit, cheese was 45 degrees in walk-in refrigerator. Cold holding/storage must maintain temperature of 41 degrees or colder. No thermometer was found in serving area refrigerator. Blue — Ice cream stand was added to front area of building with no plan review or approval. No sanitizer was detected in final rinse of dishwasher. Proper use and storage of raw eggs was not being used.

Comments: Red — In grill area, sour cream was 44-45 degrees, and tomatoes were 44 degrees. Cold storage/holding must maintain temperature of 41 degrees or colder. Potatoes are washed in three-compartment sink. They need to be washed in produce sink. In bar area, one food handler card was expired and another was missing. Blue — In grill area, kitchen floor is damaged and floor under appliances is not getting cleaned. In bar area, no sanitizer was detected in dishwasher final rinse or in bucket. Floor of walk-in refrigerator is black from spills of beer and food.

Comments: Blue — No sanitizer was detected in final rinse of dishwasher.
