Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: The restroom door was propped open with a brick. The door must self-close to prevent insects from spreading potential contamination.
Olympia Hotel at Capital Lake
2300 Evergreen Park Drive SW, Olympia
Coffee Kiosk
Oct. 8: 0 red; 5 blue.
Comments: There were no quat testing strips at the coffee kiosk. These are used to verify the concentration levels of sanitizers.
Food Service Establishment
Oct. 5: 5 red; 0 blue.
Comments: Sausage patties and links were between 44-45 degrees on the preparation table rather than below 41 degrees as required.
McDonald’s
1335 Cooper Point Road SW, Olympia
Oct. 8: 25 red; 0 blue.
Comments: The inspector observed an employee move to a new task without washing hands after handling raw eggs.
Jack in the Box #8424
520 Plum Street SE, Olympia
Oct. 11: 25 red; 5 blue.
Comments: Workers left lettuce out at room temperature without keeping track of how long it was out as required. The sanitizer they used was not strong enough and had to be remade.
Asahi
106 Legion Way SE, Olympia
Oct. 12: 40 red; 8 blue.
Comments: The inspector found chicken covered while cooling in the walk-in refrigerator. Such food must be cooled in 2-inch amounts and uncovered until 41 degrees or below. The menu lacked consumer advisories for raw or undercooked items. The in-use chlorine sanitizer was too strong and needed to be diluted. The inspector also found chicken thawing in standing water rather than under refrigeration or cold running water as required. Workers placed food on single-use containers and plastic bags rather than on reusable surfaces made of proper food grade material.
Olive Garden Restaurant #1448
2400 Capital Mall Drive SW, Olympia
Oct. 12: 5 red; 0 blue.
Comments: The inspector observed macaroni and cheese at 44 degrees rather than at or below 41 degrees.
King Solomon’s Reef
212 4th Ave. E., Olympia
Oct. 12: 0 red; 3 blue.
Comments: Workers stored in-use ice cream scoops at room temperature for over four hours. Such utensils much be stored in flowing water, ice water or hot water.
