Restaurant inspections for Nov. 3

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer.
  • Example: a worn floor that needs replacing. Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Anthony’s Hearthfire

1675 Marine Drive NE, Olympia

Oct. 19: 0 red; 6 blue.

Comments: The inspector found in-use utensils stored at room temperature water rather than on a clean surface or in hot (135 degrees) or cold (41 degrees) water. The restroom lacked a hand washing sign.

Hannah’s Bar and Grille

123 Fifth Ave. SW, Olympia

Oct. 20: 20 red; 0 blue.

Comments: A sink for handwashing was loaded with dishes and not adequately marked. The in-use sanitizer was too strong.

The Brick on Trosper

709 Trosper Road SW, Tumwater

Oct. 21: 35 red; 5 blue.

Comments: The inspector found sauteed onions at 101 degrees on the preparation table. Such onions must be cooled to 41 degrees on a 2-inch pan. There was also chicken at 65 degrees that needed to be destroyed. A mechanical sanitizer could only reach 152 degrees on three attempts.

Olympia Local Foods, Food Service Establishment

2010 Black Lake Blvd. SW, Olympia

Oct. 25: 0 red; 5 blue.

Comments: There was no sanitizer bucket prepared during food preparation and handling.

Tacos La Esquinita

430 Legion Way SE, Olympia

Oct. 26: 40 red; 6 blue.

Comments: Multiple raw meets and shell eggs were stored above ready-to-eat and lower-cooking-temperature foods. Raw meat should be stored below and away from such foods. The inspector found carne cooling in large amounts in the three-door cold hold. TCS foods must be cooled in an approved way, such as in a shallow pan or ice bath, to ensure cooling down to 41 degrees within six hours. Multiple items were thawing at room temperature rather than in refrigeration or cold running water. The in-use sanitizer was too strong. An ice scoop was found stored in an ice bin where it may have been contaminated. The establishment is maxed out on cold hold space and cannot use 2-inch shallow pan method to cool foods.

Buzz’s Bar & Grill

5018 Mud Bay Road NW, Olympia

Oct. 26: 10 red; 10 blue.

Comments: Some food worker cards were missing. The inspector found raw animal foods stored improperly. Potatoes were found stored on the ground rather than 6 inches above ground in dry storage. Single use service articles were stored under an active water leak from the roof.

120 Fifth Ave. SW, Olympia

Oct. 27: 5 red; 0 blue.

Comments: Multiple food worker cards were missing or expired.

S&J’s Caffe Express

5121 Capitol Blvd. SE, Tumwater

Oct. 28: 0 red; 3 blue.

Comments: The ice scoop was not stored in a dry clean location as required.
