Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: The inspector found the ambient and internal temperatures of foods in the walk-in refrigerator at 50 degrees rather than at or below 41 degrees.

Comments: One person missed a valid food worker card and two had expired cards. In a repeat violation, the inspector found cheesecakes at 44-45 degrees rather than at or below 41 degrees.

Comments: The inspector observed a food worker wash their hands for less than 20 seconds, touch a dirty apron and then dry their hands on their jeans.

Nov. 22: 5 red; 5 red.
Comments: Two workers had expired food worker cards. The concentration of the sanitizer in a bucket was far too low. The inspector noted utensils and raw meats were stored well.

Comments: Orange chicken was found between 130-135 degrees in hot holding equipment rather than at or above 135 degrees. This orange chicken had to be discarded.

Comments: In a repeat violation, the inspector could not find a sanitizer test kit at the facility. The corners of the walk-in floor had mold.

Comments: The inspector found multiple expired food worker cards. Salami was found at 44-45 degrees rather than at or below 41 degrees.
