Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: A box of turkey was stored on the floor rather than at least 6 inches off the ground. The ice machine also had built up ice on the inside that required cleaning.
Swing Wine Bar

Dec. 10: 10 red; 0 blue.
Comments: Oyster tags lacked sell or discard dates. These dates must be included on tags going forward.
Marina Shell Food Mart

Dec. 13: 10 red; 0 blue.
Comments: The inspector found chemicals stored above ready-to-use food equipment. All chemicals must be stored below and away from food and cleaned food equipment.
Westside Tavern
1815 Harrison Ave. NW, Olympia
Dec. 16: 0 red; 8 blue.
Comments: In-use utensils were improperly stored in room temperature water. This was corrected onsite. There was no sanitizer kit available to test warewashing facilities.
New Happy Teriyaki and Pho
2915 Harrison Ave. NW, Olympia
Dec. 16: 85 red; 0 blue.
Comments: The person in charge was unable to meet code requirements for red violations and had no certification. Employees did not have food worker cards at the time of inspection which are necessary to handle food. The inspector observed chicken improperly cooling in a covered 2-inch pan at 53 degrees. Such food must be cooled in a 2-inch pan until 41 degrees and then covered. Chicken was also found in hot holding at 110-120 degrees. This was corrected onsite by reheating chicken to at least 165 degrees. Pot stickers were found at 70 degrees with no time to control for safety. A re-inspection is required.
