Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Milk in a glass door cold hold was 44 degrees rather than at or below 41 degrees as required.

Comments: Salsa was not properly labeled with net quantity of contents and distribution/packer address. Labels must be fixed to salsa container prior to sale. This was corrected onsite.

Comments: The inspector observed ready-to-eat foods sitting on the ground. These foods were moved 6 inches off the ground as required.
Subway

Jan. 6: 5 red; 3 blue.
Comments: Additional staff did not have food worker cards onsite. Workers improperly stored in-use utensils. The utensils were in a container at room temperature without a proper cleaning/sanitizing schedule. This was corrected onsite.

Jan. 6: 30 red; 0 blue.
Comments: Chicken and fries in open air hot hold were below 135 degrees rather than at or above that temperature. Pasta salads in the display cold hold were 43 degrees rather than at or below 41 degrees as required.
Meat Market
Jan. 6: 5 red; 5 blue.
Comments: The date of the last shellfish sold was not consistently marked on tags. Such dates must be marked and tags kept for 90 days. The sanitizer was too concentrated.
Safeway
4700 Yelm Highway SE, Lacey
Jan. 19: 40 red; 10 blue.
Comments: The deli case held fried chicken at temperatures below 135 degrees rather than at or above 135 degrees as required. Foods in the cold holding display case were at temperatures above 41 degrees rather than at or below 41 degrees as required. Thermometers for the hot and cold holding units were absent or not operating. The inspector noted warewashing facilities were not properly used. Slicers were not washed/sanitized every four hours as required.
