Restaurant inspections for Dec. 14

Comments are taken directly from the latest Thurston County inspection reports, which are available at each food establishment, at the Thurston County Environmental Health Office and their website at co.thurston.wa.us/health/ehfood. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: The handwash sink did not have paper towels as required.

Meat Market

Oct. 4: 15 red; 0 blue.

Comments: Shellfish tags were not properly dated. Crab cakes in the display cold hold were 46-49 degrees rather than at or below 41 degrees.

Grocery Store and Confectionery

Oct. 4: 10 red; 0 blue.

Comments: Items in two open-air display cases were above 41 degrees rather than at or below that temperature.

PINK SUGAR ESPRESSO

6501 Martin Way E., Olympia

Sept. 20: 30 red; 21 blue.

Comments: No inspection notes provided. The listed deficiencies indicate the establishment did not meet requirements related to the person in charge being certified or in compliance with code, adequate handwashing facilities, accurate thermometer use, compliance with risk and operation plan, proper wiping cloth use, proper in-use utensil storage, properly used food and nonfood surfaces, proper plumbing as well as proper eating, tasting drinking or tobacco use.

Sept. 20: 35 red; 12 blue.

Comments: No inspection notes provided. The listed deficiencies indicate the establishment did not meet requirements related to the person in charge being certified or in compliance with code, hand washing, accurate thermometer use, proper wiping cloth use, use of food-contact surfaces, proper use of physical facilities.

CHICK-FIL-A

8302 Quinault Drive NE, Lacey

Sept. 28: 35 red; 2 blue.

Comments: No inspection notes provided. The listed deficiencies indicate the establishment did not meet requirements related to proper cooling procedures, proper cold holding temperatures and proper use of physical facilities.

WEST COAST FITNESS LACEY

5815 Lacey Blvd. SE, Lacey

Oct. 10: 35 red; 10 blue.

Comments: The person-in-charge was unable to answer questions about cold hold requirements. They also did not know to wash their hands after using a restroom. The establishment had inadequate hand washing facilities. Almond milk was held at greater than 41 degrees. They lacked thermometers in their cold holding units. Sanitizer was not ready at the time of inspection. There was not enough lighting in the food preparation area. Cups were being improperly used as scoops. Shelving lacked 6 inches of space from the floor.

RHYTHMS COFFEE LLC

210 Fourth Ave. W., Olympia

Oct. 11: 0 red; 8 blue.

Comments: The establishment did not prepare chlorine sanitizer. The bathroom door did not self-close as required.

CASA MIA

716 Plum St. SE, Olympia

Oct. 12: 30 red; 10 blue.

Comments: Sauces in hot holding were 120-135 degrees rather than at or above 135 degrees. Multiple cold hold units were 43-44 degrees rather than at or below 41 degrees. A merchandizer was being used to old open, unpackaged foods. The walk-in and preparation cold hold had mold. The floor of the walk-in freezer was made of plywood rather than a smooth, durable and moisture resistant material.

MI PUEBLO LACEY

7839 Martin Way E., Lacey

Mobile Food Unit

Oct. 28: 15 red; 5 blue.

Comments: The hand wash station had items in the basin when it needed to be empty. Raw meat was stored above ready to eat foods in the cold hold rather than below and away. No in-use sanitizer was made at the time of inspection.
