Restaurant inspections for Feb. 8

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the restaurant has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments: Multiple food items were held under 135 degrees rather than at or above that temperature.

Burger King

4830 Yelm Highway SE, Lacey

Jan. 3: 5 red; 0 blue.

Comments: Breaded chicken patties were kept in hot hold at 130 degrees rather than at or above 135 degrees.

Applebee’s

525 Sleater Kinney Road SE, Lacey

Jan. 5: 10 red; 0 blue.

Comments: Items in prep cold hold and front condiment line were measured at 47-57 degrees rather than at or below 41 degrees.

Narai Thai Asian Cuisine

320 Fourth Ave. E., Olympia

Jan. 6: 45 red; 10 blue.

Comments: Two workers had expired food worker cards. Raw eggs were stored above ready to eat foods. Chicken satay and coconut milk were stored at room temperature. Multiple cold hold units had temperatures above 41 degrees rather than at or below that temperature. The in-use sanitizer solutions were not strong enough. Multiple food contact surfaces were not properly used or constructed.

Jan. 7: 5 red; 0 blue.

Comments: Some food worker cards were missing or out of date.

Octapas

610 Water St. SW, Olympia

Jan. 7: 40 red; 0 blue.

Comments: Shellfish tags were not properly dated as required. Soups were not being properly reheated. Two cold hold units had temperatures of 49-52 degrees rather than at or below 41 degrees. This is a repeated violation. The establishment vacuum sealed fish in a manner that was not permitted. This also is a repeated violation.

Red Robin Gourmet Burgers

600 Cooper Point Road SW, Olympia

Jan. 9: 20 red; 2 blue.

Comments: The main kitchen sink lacked disposable paper towels. Sliced tomatoes on the prep line were being held at above 41 degrees rather than at or below that temperature. There was excessive ice buildup in a walk-in freezer.
