A local deli closed due to violations. Here are the food safety inspections for March 15

Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a re-inspection within 10 business days.
- If red points exceed 100, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a re-inspection.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.
Island Market

March 6: 135 red points, 15 blue points.
Due to high number of red points, the deli and food preparation section were immediately closed for at least 72 hours, according to the inspection notes. Sam Singh, the owner, told The Olympian on Tuesday that he reopened the deli on Friday after a follow-up inspection. He said he has a new hot case and he addressed the county’s concerns.
Comments from inspection report:
- The person in charge was not present during the inspection. An employee in charge was unable to demonstrate food safety knowledge.
- A person in charge washed their hands in the incorrect sink.
- Cooked chicken was incorrectly being cooled in a plastic bag.
- Uncooked pizza on a rack was at 58-60 degrees rather than being kept at or below 41 degrees or at or above 135 degrees. The pizza was discarded.
- Sausage on a prep table was at 43 degrees rather than at or below 41 degrees.
- A thermometer in a hot hold unit had a low threshold of 150 degrees. A thermometer needs to read between 100 and 200 degrees.
- A bottle holding a cleaning chemical did not have a readable label.
- The establishment’s practices did not comply with its medium risk permit. A risk category change would be required.
- Multiple merchandiser cold hold units were holding open or unpackaged foods. Such units can only hold packaged or bottled products.
- A sanitizing wiping cloth was not available during inspection.
- Newspaper was being used as a food contact surface. All food contact surfaces must be smooth, durable and easily cleanable.
Grocery Store
March 6: 25 red; 0 blue.
Comments:
- Multiple food items were in open air cold hold between 45 and 51 degrees rather than at or below 41 degrees.
- Open air cold hold units had broken thermometers.
- Raid Insect Spray was stored above ice scoops near an ice machine. Toxic substances must be stored below and away from food or food contact surfaces.
Starbucks

March 7: 0 red; 5 blue.
Comments:
- The in-use sanitizer was incorrectly prepared.
Main Chinese Buffet
5580 Martin Way E., Lacey
March 8: 45 red; 10 blue.
Comments:
- Food prepared in-house lacked a date marking.
- Some food items were being cooled in 6-inch-deep bus tubs. The items needed to be reheated to 165 degrees and placed in bus tubs no deeper than 4 inches or 2-inch pans.
- A chlorine sanitizer solution was incorrectly prepared.
- A merchandising unit was used to store open foods.
Ice machines were dirty with a mold-like substance.
