Tuna Poke II needs reinspection. Here are Thurston County food safety scores for June 14

Comments are taken directly from the latest Thurston County inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person in charge did not know what temperatures that TCS food must be kept at. They also did not know how to correct red violations upon the inspector’s arrival.
  • One employee had an expired food worker card.
  • Raw eggs were stored above ready-to-eat foods in a reach-in cold hold.
  • Rice was observed cooling at greater than 2-inch depths in the bottom of the prep table.
  • Brown rice held in a rice cooker was at 115 degrees rather than at or above 135 degrees.
  • The menu lacked a consumer advisory for raw fish items.
  • A chlorine sanitizer solution was too strong.
  • Wiping cloths were not stored in buckets as required.

Mobile Food Unit

June 12: 15 red points; 13 blue points.

Comments:

  • The handwash sink was out of soap at the time of inspection.
  • Raw eggs were stored above ready-to-eat foods in the cold hold.
  • A cut tomato mixture was observed improperly cooling in a prep unit rather than a reach-in cold hold unit.
  • Some foods were stored on the ground. Foods must be stored at least 6 inches off the ground to prevent contamination.
  • One in-use utensil was stored in room-temperature water.

Five Guys Burger and Fries

1200 Cooper Point Road SW, Olympia

June 12: 15 red points; 0 blue points.

Comments:

  • Some employees were missing or had expired food worker cards.
  • Some ice was in the front hand sink. The back hand sink was blocked by a trash can. Hand sinks must be kept clear or obstacles that could discourage handwashing and only be used for handwashing.

Jimmy John’s

1200 Cooper Point Road SW, Olympia

June 6: 10 red; 0 blue.

Comments:

  • One employee did not have a valid food worker card.
  • Some sandwich meats in the main prep unit were at 43 degrees rather than at or below 41 degrees. Some foods in walk-in were between 44-45 degrees.

Ember Goods Coffee Cart

422 Washington St. SE, Olympia

June 12: 10 red points; 0 blue points.

Comments:

  • Dairy TCS foods were at 47-51 degrees rather than at or below 41 degrees as required.

Westside Tavern

1815 Harrison Ave. NW, Olympia

June 9: 5 red points; 5 blue points.

Comments:

  • The consumer advisory for certain foods lacked a disclosure statement.
  • The in-use sanitizer bucket held a solution that was too weak.

Taco Bell

Comments:

  • A chlorine sanitizer solution was too weak.
