Here are Thurston County food safety scores for Nov. 29

Comments are taken directly from the latest Thurston County inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Nov. 17: 35 red points; 5 blue points.

Comments:

  • Cooked chicken was stored at room temperature prior to cooling in the walk-in. Foods that require time/temperature control for safety cannot be stored at room temperature unless the facility uses a time as a control plan.
  • Shredded cheese on ice was measured at 57 degrees. TCS foods must at or below 41 degrees.
  • Ice is not adequate for temperature control. Refrigeration must be used.

IHOP

3519 Martin Way E., Olympia

Nov. 30: 30 red points; 0 blue points.

Comments:

  • Half of a one-gallon carton of reconstituted hash browns were found stored at room temperature on the grill line. The hash browns were 60 degrees.
  • Sliced tomatoes in the prep fridge were at 44 degrees. Such foods must cold held at or below 41 degrees.

The Park Side Café

1909 Harrison Ave. NW, Olympia

Nov. 16: 25 red points; 0 blue points.

Comments:

  • Pumpkin hand pies were stored at room temperature. TCS foods must be cold held at or below 41 degrees, hot held at or above 135 degrees, or stored according to written plan.

Taco Time

3501 Pacific Ave. SE, Olympia

Nov. 13: 10 red points; 10 blue points.

Comments:

  • A hand sink was absent from the back food prep area. The nearest hand sink was more than 25 feet away.
  • The entrance in the back was not properly controlled. The inspector noted that light was visible at the base of the door.
  • A vegetable processor was inadequately washed, rinsed and sanitized. Food debris was visible on the processor.

Comments:

  • Various TCS foods were above 41 degrees. TCS foods in cold holding must be at or below 41 degrees.

Nov. 13: 0 red points; 5 blue points.

Comments:

  • The in-use sanitizer solution was too weak.
