Comments are taken directly from the latest Thurston County Public inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.
Thai Garden Restaurant and Lounge

Comments:
- The cooks and person in charge lacked “basic knowledge” of food safety, such as cold and hot holding temperature requirements. The person in charge also did not have a ServSafe certification.
- Employees had expired food worker cards.
- The handwashing sink had utensils and objects that blocked people from washing their hands.
- Raw chicken was stored over raw pork in the walk-in cooler.
- Cooked noodles were cooling while stored in 4-inch-deep containers with covers. Such foods must be cooled at 2-inch depths or less while uncovered.
- A chlorine bucket solution was too weak as prepared.
- Onion cutters and can openers showed evidence of food debris build up.
Pat’s Café

Jan. 18: 60 red points; 0 blue points.
Comments:
- The person in charge did not maintain active managerial control of risk factors, such as proper handwashing.
- An employee washed their hands for less than 20 seconds.
- The establishment had inadequate handwashing facilities.
- Raw eggs were stored above ready-to-eat foods in the prep unit and walk-in cold hold.
- Workers did not properly use accurate thermometers to evaluate TCS foods.
- Equipment was not properly replaced or installed, which violated their permit requirements.
Uptown Grill
514 Capitol Way S., Olympia
Jan. 19: 35 red points; 0 blue points.
Comments:
- One worker was unable to produce a food worker card.
- Cooked fries were held in room temperature storage rather than under temperature control or time as a control parameters.
- Half and half in the bar cold hold was at 44 degrees rather than at or below 41 degrees.
Mayan Family Mexican Restaurant

Jan. 12: 20 red points; 10 blue points.
Comments:
- Cooked refried beans, fried rice and ground beef did not have date marks.
- The cooks and persons in charge did not have a calibrated thermometer to evaluate temperatures of TCS foods.
- The menu lacked a consumer advisory for cooked-to-order foods.
- A sanitizer solution was too weak as prepared.
- Food contact surfaces were sanitized improperly with a weak sanitizer solution.

Jan. 19: 25 red points; 5 blue points.
Comments:
- Food worker cards were missing for some employees.
- Liquid egg on ice was at 42-43 degrees. TCS foods must be kept at or below 41 degrees.
- The menu lacked a consumer advisory statement.
- The establishment properly used time-as-a-control for hollandaise sauce but there was no written procedure for this practice. A written plan must be kept on site.
- Eggs were stored on ice rather than in an appropriate cold hold.
Wicked Pies Pizzeria

Jan. 19: 25 red points; 0 blue points.
Comments:
- Pizzas were stored at room temperature under time as a control, but without being marked to indicate pull time or discard time. Pizzas must be discarded 4 hours after they leave temperature control.

Comments:
- A can opener showed evidence of solid food debris.
- A sanitizer solution was too weak as prepared.

Comments:
- Soup and shredded cheese in the walk-in were at 43 degrees rather than at or below 41 degrees.
- The establishment properly cooled in the walk-in but their medium risk permit did not allow for cooling. The inspector instructed the establishment to cease cooling or change their risk category.
