Comments are taken directly from the latest Thurston County Public inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. For questions concerning these reports, contact the health office at 360-867-2667.

Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.
Nana Pattaya Thai Express

Feb. 1: 90 red points; 21 blue points.
Comments:
- No person-in-charge was present during the inspection. Employees were unable to demonstrate food safety knowledge.
- A food worker was unable to present their food worker card.
- Food workers changed tasks and donned gloves without properly washing their hands. The inspector directed them to wash their hands for 20 seconds.
- Both hand-washing sinks lacked paper towels and one did not have hot water.
- Raw beef was stored above ready-to-eat foods. Raw animal products must be stored below and away from read-to-eat foods to prevent potential contamination.
- Workers pooled more than three eggs. This cannot be done unless it’s part of a batter or immediately served.
- Previously heat-treated rice noodles were stored in water at 70 degrees. TCS foods must be cold held at or below 41 degrees, hot held at or above 135 degrees or in accordance with a written procedure.
- Bean sprouts in a prep unit were cold held at 55-60 degrees. Rice, bean sprouts and half and half were held under a counter at 48-54 degrees. TCS foods must be cold held at or below 41 degrees.
- Chicken was observed thawing at room temperature. Thawing must be done under refrigeration or under cold running water.
- One compartment of a three-compartment sink improperly contained a bucket of thawing chicken. The inspector directed workers to remove the bucket and properly wash, rinse and sanitize.
- In-use utensils were stored in room temperature water. In-use utensils must be stored in water with ice, hot water above 135 degrees or changed every four hours.
- Worker had not made sanitizer by the time of inspection.
- No sanitizer test strips were available during the inspection.

Comments:
- An employee washed their hands at a prep sink rather than a hand-washing sink. The hand-washing sink lacked paper towels, but this was corrected.
- Some TCS foods in a prep unit were cold held at greater than 41 degrees.
- The facility used time-as-a-control properly but written procedures were missing.
- An in-use chlorine sanitizer solution was too weak.

Comments:
- Person-in-charge demonstrated excellent food safety knowledge.

- The operator used time-as-a-control properly but written procedures were missing.

Comments:
- A chlorine sanitizer solution was strong as prepared. The barista properly remade and tested the solution on site.

- A wiping cloths sanitizer solution was too weak as prepared. The person-in-charge properly remade and tested the solution on site.
- A can opener had evidence of food debris build up. The person-in-charge cleaned the can opener on site.
