Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:
- A food worker card was expired and others were not available upon request.
- A food worker did not wash their hands before wearing gloves and changing tasks.
- The temperature in a walk-in cooler was 53 degrees after reportedly being repaired. TCS food items measured 45-53 degrees.
- An in-use sanitizing solution was too weak as prepared.

Comments:
- A whole roast chicken with a depth of more than 5 inches had been improperly cooled. Chicken must be cooled properly by cutting it into small pieces so it can cool uncovered at a depth of 2 inches or less.
- Broccoli crunch, chicken samosa and crunch claw salad were at 44-45 degrees in a deli cold case. The food items were reconditioned to 41 degrees or less in a walk-in cooler.
- An in-use sanitizer solution was too weak as prepared.
Coffee Shop
July 19: 5 red points; 5 blue points.
Comments:
- Milk and dairy products measured between 44-45 degrees rather than at or below 41 degrees.
- An in-use sanitizer solution was too weak as prepared.
Cascadia Grill
200 Fourth Ave. W., Olympia
July 18: 25 red points; 10 blue points.
Comments:
- The person-in-charge did not demonstrate food safety knowledge.
- Gravy and sauces were observed reheating on a steam table rather than on a stove. Previously cooled foods must be rapidly reheated to 165 degrees before holding them at 135 degrees or above.
- Under-cooked steak was offered on a children’s menu. No raw or under-cooked food items can be offered on children’s menus.
- An in-use sanitizer solution for food contact surfaces was too strong as prepared.
- Sanitizer test strips were not available during the inspection.

- A hand-washing sink was not accessible due to piles of objects hindering its accessibility.
