Here are Thurston County food safety scores for Aug. 14

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Comments:

  • The person in charge and food workers did not demonstrate basic food safety knowledge, such as reheating and cooling procedures.
  • Refried beans and pork fat were improperly cooled.
  • An ice-scoop holder had evidence of soil and slime build up.
  • An in-use chlorine sanitizing solution was too weak as prepared.

Comments:

  • Hand sinks lacked paper towels and soap.
  • Whole shell eggs were stored above ready-to-eat food.
  • Yard maintenance equipment was stored on a prep table.
  • Dirty dishes were stored in front of a prep sink. A three-compartment sink must be used for ware washing.
  • Light was visible at the base of a door. Entrances must be properly sealed to prevent potential contamination.
  • A sanitizer solution was prepared at the time of inspection.
  • Food worker cards were not available upon request.
  • An internal food thermometer was absent.

Grocery Stores and Confectioneries

Aug. 1: 10 red points; 10 blue points.

Comments:

  • Raw, whole eggs were stored above ready-to-eat foods.
  • Cold held cheese was warmer than 41 degrees.
  • The establishment did not verify they were receiving TCS food items at proper temperatures.
  • Non-food items, hygiene products and chemicals were stored above food on a shelf.

Aug. 2: 30 red points; 5 blue points.

Comments:

  • Arugula and cut leafy greens were held in room temperature storage.
  • Two cold hold units had food items that were 43-44 degrees. Cold held TCS items must be at or below 41 degrees.

Arby’s

532 Sleater Kinney Road SE, Lacey

Aug. 1: 15 red points; 7 blue points.

Comments:

  • There was low pressure for hot water in a hand-washing sink.
  • Chopped and shredded lettuce in the cookline was at 42 and 45 degrees for less than 12 hours. The person in charge restored the food items in a walk-in cold hold to bring the temperature down to 41 degrees or below.
  • Boxes of potato fries were stored on the freezer floor. TCS foods must be at least 6 inches off the ground.
  • The lights in a freezer did not work properly.

Olympia Coffee Roasting Co.

Aug. 6: 15 red points; 5 blue points.

Comments:

  • A food worker card was expired.
  • Milk and oat milk were measured at 47 degrees and 53 degrees respectively after four hours in a small fridge. The person in charge restored the milk and oat milk in a two-door reach-in cooler. All cold held TCS foods must be at or below 41 degrees.
  • An in-use sanitizer solution was too weak as prepared.

Comments:

  • TCS foods and salads in an open display were warmer than 41 degrees.
  • The thermometer on hand was inaccurate.

Comments:

  • Salad bowls and yogurt in a cold case display were 44-45 degrees rather than at or below 41 degrees.

Comments:

  • Halibut and various raw fish were cold held at 47-49 degrees in a fish prep unit. All cold held TCS food must be at or below 41 degrees. The person in charge adjusted the unit.
  • A ware-washing unit reached 157 degrees rather than 160 degrees.

Comments:

  • Shelving and coolers were placed in front of a hand sink, making it inaccessible.
  • A three-compartment sink was used incorrectly.

  • An in-use hand sanitizer was too strong as prepared.
