Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:
- Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
- Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
- Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
- If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
- If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
- Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

- The establishment was cited for deficiencies related to workers hand-washing as required and having adequate hand-washing facilities. Food workers must wash their hands for at least 20 seconds with soap and warm water.
- The establishment was cited for improper cold holding temperatures.
- The menu lacked a proper consumer advisory for animal products that may be served raw or cooked to order.
- The menu had unapproved changes and additions.
- No sanitizer solution was made at the time of inspection.

Comments:
- The person in charge did not perform duties to maintain active managerial control of risk factors.
- The hand sink was inaccessible because the basin was occupied.
- Cold-held foods were measured at warmer than 41 degrees.
- Thermometers were not used to evaluate food temperatures.
- Some equipment and procedures were changed without proper approval.
- A cold-hold unit under the counter was undersized and unable to keep required temperatures. A merchandiser door was broken and the glass was cracked.
- A sanitizer solution was too strong as prepared.
- Sanitizer test strips were not available during the inspection.
- Workers did not use a third basin to properly sanitize wares after washing and rinsing.

- The inspector observed improper hand washing. Food workers must wash their hands for at least 20 seconds with soap and warm water.
- A can opener had evidence of food debris build up.

- Clam chowder and lobster pasta were observed cooling in covered containers. TCS food items must be cooled uncovered in shallow containers until they reach 41 degrees or less.

Comments:
- One food worker card was expired.
- The counter around the mop sink needed to be replaced. The inspector highly recommended the establishment install a splash guard between the mop sink and ice machine. Additionally, the inspector noted that the floor in front of the preparation area needed to be replaced.
