Here are Thurston County food safety inspections for Sept. 11

Comments are taken directly from the latest Thurston County Public Health and Social Services (PHSS) inspection reports, which are available for each food establishment, at the Thurston County Environmental Health Office and their website. Reading inspection scores:

  • Attention should be given to the type of violation (red versus blue) and whether the establishment has a history of red violations or repeat violations.
  • Red violations are those most likely to cause food-borne illness and must be corrected immediately if feasible or according to a compliance schedule established by the health officer. Example: not keeping food at the right temperature.
  • Blue violations relate to the overall cleanliness and condition of operation and must be corrected according to a compliance schedule established by the health officer. Example: a worn floor that needs replacing.
  • If red points exceed 45, the county will require a reinspection within 10 business days. A reinspection also is required if total red and blue points exceed 65.
  • If red points exceed 100 and there’s a lack of managerial control, the county will shut down the establishment for at least 72 hours. The establishment may reopen after management and employees complete retraining and demonstrate corrective action during a reinspection.
  • Some common abbreviations: PHF/TCS is potentially hazardous food/time control for safety; RTE is ready to eat; PIC is person in charge; FWC is food worker card; CDI is corrected during inspection.

Bonsai Wok Teriyaki

Aug. 28: 35 red points; 5 blue points.

Comments:

  • The person in charge and cook did not demonstrate basic food safety knowledge such as cold and hot holding temperatures, proper cooking temperatures and proper cooling procedures.
  • Raw chicken was stored over fresh mushrooms. Raw foods must be stored below read-to-eat items.
  • Fried rice was observed cooling in a covered container. TCS food items must be cooled in a shallow, uncovered container.
  • Boxes of raw chicken were stored on the floor of a walk-in cooler. Food items must be stored at least 6 inches off the ground.

Evergreen Valley Espresso

Aug. 29: 30 red points; 0 blue points.

Comments:

  • Milk and other dairy items in an under-counter cold-hold unit were at 47 degrees rather than at or below 41 degrees as required.
  • An in-use chlorine sanitizer solution was too strong as prepared.
  • The establishment did not address several items from a previous compliance assessment.

The Reef

Aug. 30: 30 red points; 0 blue points.

Comments:

  • Shell tags were not properly dated.
  • Potatoes were observed cooling at depths greater than 2 inches. TCS foods must be cooled at depths of less than 2 inches in an uncovered container until the food reaches 41 degrees or below.

Comments:

  • An employee at the register did not wash their hands before donning gloves to package pizza slices.
  • A sanitizer solution in a spray bottle was too weak as prepared.
  • A three-compartment sink did not indirectly drain to a sewer line.

Comments:

  • An employee did not remove their gloves and wash their hands after cracking eggs. Instead, they continued washing utensils and food containers.

Aug. 23: 10 red points; 10 blue points.

Comments:

  • Garlic butter in a container on ice was measured at 45-55 degrees. The mixture needs to be at 41 degrees or lower.
  • An in-use sanitizer was too strong as prepared.
  • A dish-washing sanitizer was too strong as prepared.

Comments:
